AVOCADO TOAST With Broccoli Sprout Guacamole

This Avocado Toast with Broccoli Sprout Guacamole not only provides a satisfying crunch, but also offers a nutrient-packed and flavorful twist to the classic avocado toast. Enjoy this wholesome and delicious dish!

Ingredients:

  • 2 ripe avocados
  • 1 cup broccoli sprouts
  • ¼ cup red onion, finely diced
  • 1 large tomato, seeds removed and diced
  • ¼ cup fresh cilantro, chopped
  • 1-2 cloves garlic, minced
  • Juice of 1 lime
  • Salt and pepper to taste
  • Sliced whole grain bread, 4 slices
  • Olive Oil for drizzling
  • Optional: 1 jalapeno, seeds removed and finely chopped for heat

Instructions:

Broccoli Sprout Guacamole

  1. Prepare Avocados: Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
  2. Mash Avocados: Use a fork or potato masher to mash the avocados to your desired consistency – chunkier vs. smooth. Recommend a chunky texture for this recipe.
  3. Add Broccoli Sprouts, Vegetables & Seasonings: Add the finely chopped broccoli sprouts, diced red onion, tomato, cilantro, minced garlic, lime juice and salt and pepper to taste. If you like heat, add finely chopped jalapeno as well.
  4. Mix Well: Gently mix all the ingredients until well combined. Be careful not to overmix to maintain a chunkier texture. Taste the guacamole and adjust the lime, salt, and pepper to your preferences.
  5. Chill: For best flavor, cover the guacamole with plastic wrap, ensuring it directly touches the surface of the guacamole to minimize oxidation. Refrigerate for at least 30 minutes before serving.

 

Making The Toast

  1. Toast the Bread: Toast the slices of whole grain bread to your desired level of crispiness.
  2. Spread Guacamole: Once the bread is toasted, spread a generous amount of the broccoli sprout guacamole onto each slice.
  3. Drizzle with Olive Oil: Lightly drizzle olive oil over the guacamole on each toast for added flavor, richness.
