Broccoli Sprout and Chickpea Buddha Bowl

This Wild About Sprouts Broccoli Sprout and Chickpea Buddha Bowl is not only visually appealing but also packed with a variety of textures and flavors. It’s a well-balanced and nourishing meal that provides a mix of vegetables, grains, proteins and healthy fats.

Ingredients:

For the Bowl:

  • 1 cup cooked quinoa or brown rice
  • ½ a Container of Wild About Sprouts broccoli sprouts, approximately 1 cup
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 cup cooked chickpeas (from can)
  • 1 avocado, sliced
  • ¼ cup red onion, thinly sliced
  • ¼ cup feta cheese, crumbled (optional)
  • 2 tablespoons pumpkin seeds (pepitas), toasted

For the Tahini Dressing:

  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup or honey
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Water (as needed to adjust consistency)

Instructions:

  1. Cook the Chickpeas: Drain, rinse and thoroughly dry chickpeas. Toss with olive oil, salt and any preferred spices (e.g., cumin, paprika, or garlic powder). Spread the chickpeas on a baking sheet and roast in the oven at 400°F for 20-30 minutes or until they become crispy. Be sure to shake the sheet every 5-10 minutes to ensure even cooking. You can also air fry the chickpeas at 375°F for 15-20 minutes.
  2. Prepare the Tahini Dressing: In a small bowl, whisk together tahini, olive oil, lemon juice, maple syrup or honey, minced garlic, salt, and pepper. If the dressing is too thick, add water a little at a time until you reach your desired consistency. Set aside.
  3. Assemble the Bowl: In individual bowls, arrange cooked quinoa or brown rice as the base. Arrange Wild About Sprouts broccoli sprouts, cherry tomatoes, cucumber slices, cooked chickpeas, avocado slices, red onion, and crumbled feta (if using) in separate sections on top of the grains.
