Wild About Sprouts Pesto

Ingredients:

  • One (1) 3-oz container of Wild About Sprouts Clover & Alfalfa Sprouts*, approximately 2 cups
  • ½ container of Wild About Sprouts Broccoli Sprouts*, approximately 1 cup
  • 1 ¼ cup baby spinach, leaves packed
  • 1 ¼ cup parmesan cheese, shredded
  • ¾ cup toasted walnuts, halves
  • ¾ cup olive oil
  • ½ cup Italian flat leaf parsley, fresh with no stems, packed
  • 2 tablespoons lemon juice, freshly squeezed
  • 2 tablespoons white or champagne vinegar
  • 2 large garlic cloves, fresh
  • ½ teaspoon sugar, more or less to taste
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

 *Note: Any variety of Wild About Sprouts can be used

Instructions:

  1. Begin Blending: Place all of the Wild About Sprouts, spinach, parsley and basil into the bowl of a large food processor and pulse a few times until the ingredients begin to blend together. Add the parmesan and walnuts and pulse several times after each addition. Scrape down the sides and bottom of the food processor bowl to incorporate all ingredients. Add all remaining ingredients except olive oil, and pulse until all ingredients are finely minced.
  2. Add the Olive Oil: Slowly drizzle in the oil, stopping to scrape down the bowl after the addition of every few ounces of oil. Pulse until the desired consistency is reached. All of the oil might not be needed depending on the use for the pesto.
  3. Taste and Adjust: Taste and adjust the seasonings as needed as herb flavors will vary depending on season. Chill at least four hours before use, allowing the flavors to blend and meld.

Sprout Pesto Pasta

This Sprout Pesto Pasta is a delightful and unique way to incorporate Wild About Sprouts into a classic pasta recipe. The pesto brings a fresh and slightly peppery flavor, while the cherry tomatoes and baby spinach add color and even more nutrients.

Ingredients:

For The Pesto Pasta:

For The Pasta:

  • 12 ounces of your favorite pasta (spaghetti, fettuccine, etc.)
  • 2 cups baby spinach leaves
  • 1 cup cherry tomatoes
  • ¼ cup grated Parmesan cheese (for garnish)
  • ¼ cup Wild About Sprouts, any variety (for garnish)
  • Red Pepper flakes (optional, for some heat)

Instructions:

  1. Prepare the Wild About Sprouts Pesto Pasta: Follow the instructions from the Wild About Sprouts Pesto recipe.
  2. Prepare Tomatoes: Preheat the oven to 400°F. Toss the cherry tomatoes with a drizzle of olive oil, salt and pepper. Place on a baking sheet and roast in the preheated oven for about 15-20 minutes or until the tomatoes are blistered.
  3. Cook the Pasta: Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta cooking water before draining.
  4. Cook the Spinach: In a large skillet, heat two teaspoons of olive oil over medium heat. Add baby spinach and sauté for a few minutes until the spinach wilts.
  5. Assemble the Sprout Pesto Pasta: In a large mixing bowl, combine the cooked pasta, blistered tomatoes and sauteed spinach. Add the sprout pesto to the pasta mixture, tossing until the pasta is evenly coated. If needed, use the reserve cooking water to adjust the consistency of the pesto. Add red pepper flakes for some heat (optional).
  6. Serve and Enjoy: Divide the Sprout Pesto pasta among serving plates or bowls. Garnish with grated parmesan cheese & Wild About Sprouts. Serve immediately and enjoy your flavorful and nutritious pasta dish!
