Wild About Sprouts Pesto

Ingredients:
- 1.One (1) 3-oz container of Wild About Sprouts Clover & Alfalfa Sprouts*, approximately 2 cups
- 2.½ container of Wild About Sprouts Broccoli Sprouts*, approximately 1 cup
- 3.1 ¼ cup baby spinach, leaves packed
- 4.1 ¼ cup parmesan cheese, shredded
- 5.¾ cup toasted walnuts, halves
- 6.¾ cup olive oil
- 7.½ cup Italian flat leaf parsley, fresh with no stems, packed
- 8.2 tablespoons lemon juice, freshly squeezed
- 9.2 tablespoons white or champagne vinegar
- 10.2 large garlic cloves, fresh
- 11.½ teaspoon sugar, more or less to taste
- 12.½ teaspoon salt
- 13.¼ teaspoon black pepper
Instructions:

Begin Blending: Place all of the Wild About Sprouts, spinach, parsley and basil into the bowl of a large food processor and pulse a few times until the ingredients begin to blend together. Add the parmesan and walnuts and pulse several times after each addition. Scrape down the sides and bottom of the food processor bowl to incorporate all ingredients. Add all remaining ingredients except olive oil, and pulse until all ingredients are finely minced.

Add the Olive Oil: Slowly drizzle in the oil, stopping to scrape down the bowl after the addition of every few ounces of oil. Pulse until the desired consistency is reached. All of the oil might not be needed depending on the use for the pesto

Taste and Adjust: Taste and adjust the seasonings as needed as herb flavors will vary depending on season. Chill at least four hours before use, allowing the flavors to blend and meld
