Sprout Pesto Pasta
This Sprout Pesto Pasta is a delightful and unique way to incorporate Wild About Sprouts into a classic pasta recipe. The pesto brings a fresh and slightly peppery flavor, while the cherry tomatoes and baby spinach add color and even more nutrients.
Ingredients:

● For The Pasta
- 1.12 ounces of your favorite pasta (spaghetti, fettuccine, etc.)
- 2.2 cups baby spinach leaves
- 3.1 cup cherry tomatoes
- 4.¼ cup grated Parmesan cheese (for garnish)
- 5.¼ cup Wild About Sprouts, any variety (for garnish)
- 6.¼ cup Wild About Sprouts, any variety (for garnish)
Instructions:

Prepare the Wild About Sprouts Pesto Pasta: Follow the instructions from the Wild About Sprouts Pesto recipe.

Prepare Tomatoes: Preheat the oven to 400°F. Toss the cherry tomatoes with a drizzle of olive oil, salt and pepper. Place on a baking sheet and roast in the preheated oven for about 15-20 minutes or until the tomatoes are blistered.

Cook the Pasta: Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Reserve ½ cup of pasta cooking water before draining.

Cook the Spinach: In a large skillet, heat two teaspoons of olive oil over medium heat. Add baby spinach and sauté for a few minutes until the spinach wilts.

Assemble the Sprout Pesto Pasta: In a large mixing bowl, combine the cooked pasta, blistered tomatoes and sauteed spinach. Add the sprout pesto to the pasta mixture, tossing until the pasta is evenly coated. If needed, use the reserve cooking water to adjust the consistency of the pesto. Add red pepper flakes for some heat (optional).
